Kim V is a mom, wife, business owner, consultant, public speaker, martial artist, amateur cook, and dog owner. She is also over-extended, exhausted, middle-aged woman who is not investing enough time in any of the activities above and does not have a clean or organized home.

Here we go…

COVID 19 is challenging us in many ways. For my family, it’s the persistent challenge of balancing (rather, integrating) business and family needs – but the new challenge of doing this from home.

I am struggling with the challenges: my kids need home-schooling and direction (and separate spaces to avoid bickering); my business needs direction as we rapidly adapt to a virtual workplace and diminish productivity/income; and I am trying to manage the uncertainty of what may be coming personally and financially… and did I mention trying to maintain a good relationship with my husband who’s also adapting to the unexpected surge in work and family stress.

So to that end (being a “glass is half full” and “make the best of it” person), I have started a blog with the goal of connecting with my friends, inspiring creativity, sharing the things I love (with the people I love), and learning new things.

Challenge 1: COVID-19 Pantry

Goal: Use only what is in your pantry, fridge or freezer to create an interesting (and hopefully edible) meal – stay home, get by with what you have, and avoid going to the store.
Obviously we’ll all eventually make a grocery run, but even the shelves at the stores are limited, so make the best of what’s available. Points for unusual items, presentation, and success (based on your perception of tastiness). Pictures and commentary also encouraged!
